WHY WE LOVE IT: Boulder’s restaurant row — Frasca, L’Atelier, Mateo, etc. — can be overwhelmingly Mediterranean at times, so it’s a good thing Aji’s just down the block serving a pan-Latin menu of empanadas, arepas and carne de vaca. WHAT TO GET: Ceviche
