I'm a long-time lover of quick breads. They are so yummy. But, even better, they are incredibly easy to make and a fantastic thing to make ahead, freeze and thaw for later. In fact, I'll slice them frozen and stick pieces in my kids' lunch boxes. By lunch, they are thawed and ready to eat!

My secret for the perfect quick bread is this: Spray your bread pan with some nonstick cooking spray, then line it on all sides with a single piece of parchment paper so you can easily remove the loaf from the pan.

Spiced Pear Bread


Yes - this was originally a muffin recipe. But there's a fun fact: You can convert a muffin recipe to a quick bread recipe by simply dropping the oven temperature by 50 degrees and baking for a longer time period - usually about 60 to 70 minutes. For me, this recipe takes about 60 minutes in the oven. But be sure to start pulling it out around 60 minutes to ensure that you don't over bake it. You'll know it's done when you stick a toothpick into the middle of the loaf and it comes out clean.
