Food trailer boasts Philly cheesesteak with a ‘hillbilly twist’

JACKSON, MI – Jason Pulver’s Philly cheesesteak doesn’t actually include steak.

Smoking meats has transitioned from a hobby to a part-time job and then a full-time job for Pulver. And his unique Philly cheesesteak creation inspired the name for his new business: Phillybilly.

“I was going to do Philly cheesesteaks, but I didn’t like the price of rib-eye, so I tried to smoke brisket,” Pulver said. “So it’s a Philly cheesesteak with my hillbilly twist.”

Pulver’s big yellow truck and trailer could be seen at various community events last summer. This year, he has set up shop in the parking lot at Bob’s Take Out, 737 Page Ave.

"My wife saw this (trailer) on Craigslist and said, 'Well, you sit out back smoking meat all the time anyways,'" Pulver said. "And I'd always wanted a restaurant, so why not?"

Food options besides the Philly cheesesteak include pulled pork sandwiches, brisket and cheese hoagies, burgers and brisket quesadillas. A mix of salt, pepper and garlic go into the homemade rubs. Pulver slices the meats and cheeses right in the trailer.

Pulver considered opening a more permanent location in a building, but the trailer was more affordable.

With two kids age 4 and 8 at home, Pulver said he’s wanted something to hand down to his children some day, if they want to take over the business. He has one employee for now, and may get additional help when working events this summer.

Phillybilly opened for the season earlier this month and is open weekdays from 11 a.m. to 6 p.m., for now.
