Denver Steak with Signature Rub
Ingredients:
3 Tbs salt
3 Tbs black peppercorns
3 Tbs smoked paprika
2 Tbs coriander seeds
1 Tbs cumin seeds
1 tsp caraway seed
3/4 tsp red pepper flake
“Denver” cut steak
Directions:
In a spice grinder, grind peppercorns, coriander seeds, cumin seeds, and caraway. Mix with rest of ingredients. Season the steak liberally with the rub. Sear steak in a very hot cast iron pan on both sides until a thick crust is formed. This will be about four minutes on each side for medium rare depending on steak size. Serve with compound butter and roasted garlic heads.
