Here are the food safety inspection reports from Lehigh and Northampton counties, conducted the week of March 17.
Each week, we highlight the inspection reports provided through the Pennsylvania Department of Agriculture. The department performs the inspections in many areas, while some municipalities such as Allentown and Bethlehem conduct their own inspections.
All establishments are inspected once per year, and inspectors may return several more times if the initial inspection is not passed or complaints are received. (For more information on how food safety inspections are conducted in Pennsylvania, view a list of FAQs.)
As noted by the Department of Agriculture, the reports are merely a “snapshot” in time, and they may not be representative of the restaurant’s long-term condition. Many of the violations are corrected on the spot prior to the inspector leaving the establishment.
If a food provider is considered “out of compliance”, that means it has one or more violations that require a return visit by an inspector. The establishment is given time to fix the violations and remains open for business.

- The person in charge allowed the use of the kitchen after being told at the previous inspection in February that it could not be used without approval from AHB due to a prolonged period of inactivity. The hood system was not serviced before bringing a cook in and the use of the system caused a fire. Ensure all approvals for the use of the kitchen have been done before returning the kitchen to use.
- The material from the fire extinguisher sprayed on the grill, utensils and equipment stored next to the cook line. Wash, rinse, and sanitize the equipment.
- The hood has an extreme buildup of grease behind the panels. The ANSUL® system is also out of date. The fire department as well as health department are requiring the cleaning and servicing of this system before the kitchen may reopen. Service these items.
- The cookline and surrounding area was sprayed with a fire extinguisher and the material from it is coating the equipment. Clean the affected area and equipment.

- Manual warewashing equipment observed with buildup of filth and food residue and not cleaned frequently throughout the day. Increase cleaning to prevent buildup.
- Slushie machines, were observed to have food residue and were not clean to sight and touch. Increase cleaning frequency to prevent food residue build up.
- Food handling employee does not have available food handling certification. Obtain food handling manager certification or register in the course by 04/01/24.
- Soap was not available at the handwash sink in the kitchen area. Ensure hand soap is always available at the handwashing sink.
- Paper towels were not available at the handwashing sink. Ensure proper hand drying provision is available at the handwashing sink.
