Lamb Weston is making a big bet on the market for french fries coming back, investing $415 million in a plant in Idaho.

The investment will add a new processing line to the Lamb Weston facility in American Falls, Idaho, increasing its capacity by 350 million pounds of frozen french fries and other potato products. The new line is scheduled for completion by mid-2023 and will add about 130 new jobs. The $415 million investment will include additional modernization of the facility, which was built in 1961.

“We continue to be confident about the long-term health and growth of the global french fry market,” Lamb Weston CEO Tom Werner said in a statement. He noted that the company recently announced plans to build a french fry plant in China and increase capacity expansion in Russia with its European joint venture, Lamb-Weston/Meijer.
