The Oxbow Bakery: Trust us, you need this pie

PALESTINE, TX (KLTV) - Becky and David Wolfe are a mother-son pie-making duo who will have you hooked after your first taste of their bakery's delicacies.

For nearly five years, Becky and David have made an old mule barn the home of their sweet little business, Oxbow Bakery and Antiques. They offer lunches (we are told the chicken salad is unbelievable) and make beautiful, moist cakes like red velvet, German chocolate, carrot and Italian creme. But what keeps most people coming back is the pie.

The first thing you notice about the Oxbow pies is the mountain of meringue that graces most of them. It's light and voluminous, and makes you want to dive right in.

The coconut is a favorite of many; there is a sprinkling of toasted coconut flakes across the top of the meringue on this one, and I bought one to share with a loved one for Mother's Day, as coconut is her favorite pie. She ate the whole thing all by herself within two days, and said afterward, "That coconut pie was FINE...where is that bakery again?"

David gave me a slice of lemon icebox to eat during the time I spent there, and I have to tell you, it was out of this world. it was really tangy, not "dead sweet," and the crust, made by David, as all the crusts are, was flaky and delicious. They make numerous other varieties, including strawberry, buttermilk, chocolate, banana blueberry, pineapple cream, and several types of pecan pies.

These pies are so well-loved that the local school district asked the Wolfes to make pies for the teachers during Teacher Appreciation Week, and that's what they were busily doing while I visited with them. There was also a list of orders for Mother's Day pies to be made; needless to say, this pair was up early and worked hard all day in order to take care of their customers.

"We had so many pie orders that we didn't serve lunch today; sometimes we have to put a sign on the door that says 'sorry, no lunch today,' but our customers understand. Baking always comes first," Becky explained.

Becky said that their customers love the nostalgic feel of the bakery and antiques shop, which takes up half the building.

"Even older people come in here and say 'my grandmother had one of these...I remember these from childhood.' I like that!" she told me.

The antiques are charming, and include everything from vintage toys to stoneware mixing bowls to a longhorn skull mounted and painted by an artist.

Some folks have enjoyed being in the bakery so much that they've asked to have their weddings, showers, or reunions there, so David recently purchased a small park area behind the bakery to transform into an events venue.

The Oxbow Bakery will surely be there for years to come, if their customers have anything to say about it. I suggest that you head to Old Town Palestine soon to try several varieties for yourself, and take one home to enjoy later, too. You won't be sorry.
