The post-Labor Day launch will be followed by a winter opening at a second campus, UC-San Diego.
Students and professors can select from menu faves that include Naughty Naan, topped with cheese, onions, jalapeños and a choice of lamb, chicken or paneer; Deconstructed Samosas; Hella Vegan Burritos; “insanely spicy” Dynamite Tangra Wings; and the Tandoori Chicken Sandwich.
The Kapoors started with a food truck in 2009, then built their first brick-and-mortar location in downtown San Mateo in 2011. There are now 13 restaurants nationwide, including San Jose, Cupertino, downtown Palo Alto, Lafayette, Oakland and San Francisco; three food trucks; plus digital kitchens.
Building on that success, the chain also has new corporate and franchised eateries in the works in California (a San Ramon location will open soon), New Jersey, Colorado, Utah, Georgia, Texas and Indiana.
