The Logan Square location for Austin, Texas sushi chef Otto Phan’s Chicago restaurant has been revealed. The new restaurant, which still lacks a name, will move into the vacant space at 2507 W. Armitage Avenue, according to a liquor license application.
Phan is moving to Chicago after leaving Kyōten Sushiko, a sushi restaurant where he charged $150 for his 20-course omakase. He’ll charge $240 in Chicago and plans on opening the restaurant next month.
The Chicago restaurant will be 1,200 square feet with seven seats. Reservations are mandatory for the two nightly seatings. Phan’s gunning for Michelin-star status in Chicago, a marketplace he felt that was better suited for that undertaking. Back in May, when Phan announced his arrival, he told the Tribune that “there’s no good sushi in Chicago.” He’ll source about 80 percent of his fish from Japan.
Phan’s story is unorthodox. He majored in petroleum engineering at the University of Texas at Austin before opening Kyōten Sushiko in 2014. It was a food trailer. Two years later, he opened the current iteration. His parents immigrated from Vietnam and he was born in Houston. He learned on the job working at Bar Masa in New York and Uchi in Austin.
There’s not a lot of foot traffic surrounding the space. But Phan claimed he won’t need it as his restaurant is reservation only. Phan’s not ready to reveal more information. Keep it locked here for more information as Phan’s ready to share.
