BROOKLYN, MI – Staples like cheeseburgers, hot dogs, pretzels and French fries can be found throughout the Faster Horses Festival, as well as a few other less-expected options.
Chinese food, Cajun food and more can be found at the perimeter of the festival. Here’s a few dishes that stood out,
Gator bites
What is it? Chunks of fried alligator served over a bed of spicy jambalaya rice or on a sandwich roll (your choice)
What does it cost? $15
Where is it from? Bayou Billy’s
Bayou Billy’s, also serves sausage, chicken and even rice with veggies only for vegetarians.
Fenton resident Caitlyn Peca ordered the gator bites because she’s had alligator before and liked it. She said that alligator meat is a little chewy, similar to calamari.
Wood-fired pizza
What is it? A 10-inch personal pizza cooked in an oven that uses wood logs for fuel.
What does it cost? $12 to $15, depending on your choice of toppings
Where is it from? Rollin’ Stone Wood Fired Pizza
For a pizza that cooks in minutes, hungry concert-goers can check out Rollin’ Stone Wood Fired Pizza. Customers pick their toppings, watch as employees make the pizza, put it in the oven and turn it to cook it evenly.
Jake Combs, who works at Rollin’ Stone, said the reason the pizza cooks so quickly is because the oven reaches temperatures around 800 degrees. This allows the pizzas to be cooked in about a minute and a half.
“You’ve got to keep rotating and moving them around in the oven to make sure they don’t burn too much,” he said.
Coconut shrimp stick bowl
What is it? A bowl of shrimp, chicken and steak over rice in a pineapple or tortilla bowl
What does it cost? $15
Where is it from? Taste & Tell
Those looking for a taste of the Caribbean can stop by Taste & Tell, which also serves a fried corn cob on a stick for festival-goers looking to eat on the go.
The Faster Horses Festival takes place July 19, 20 and 21 from Michigan International Speedway in Brooklyn, Michigan.
