Black Pav Bhaji Bunny Chao

A dish that celebrates the spirit of Mumbai, this time we bring you the delicious recipe for the black pav bhaji bunny chao.

Ingredients

For the vegetable mash:

250gm potatoes, chopped

250gm tomatoes, chopped

50gm green peas

Water

Salt


For the black masala:

2 bay leaves

1tsp fennel seeds

1 black cardamom

1tsp black peppercorns

1/2tsp cloves

A few cinnamon sticks

2 stone flowers

1tbsp coriander powder

1tsp cumin powder

1tsp amchur powder

1/2 dry coconut

50gm butter

1tbsp garlic, crushed

1/2 cup onions, chopped

1 capsicum, chopped

black masala

1tbsp coriander leaves


Method:

For the vegetable mash:

  1. In a wok add potatoes, tomatoes, green peas, water and let it boil.
  2. Once the vegetables are cooked, mash the vegetables and add black masala and water.
  3. Add salt and cook it on high flame.
  4. Once the mixture comes to a boil our black pav bhaji is ready.

For the black masala:

  1. In a pan, roast all the spices on medium flame.
  2. Transfer it to a bowl and let it cool.
  3. Roast the dry coconut on high flame.
  4. Allow the coconut to cool down, cut it into pieces and add it into the mixing jar with the spice mix.
  5. Grind it into a fine powder.
  6. In a pan, add butter, garlic, onion and saute it n high flame till the onions turn translucent.
  7. Add capsicum, black masala, coriander leaves, mix well and our black masala is ready.

Assembling:

  1. Heat the bread loaf with some butter, serve it with black bhaji, butter and coriander and cheese sauce.
