It was produced by Joe Henry and includes music from a 2013 solo session at the pianist's home studio in New Orleans and an October 2015 session featuring musicians Bill Frisell, Charles Lloyd, Greg Leisz, Jay Bellerose, and David Piltch, with special guest vocalist Rhiannon Giddens and pianist Van Dyke Parks, recorded in Los Angeles the month before Toussaint died.

Eve's Bayou is about a young girl (Eve) and her family growing up on a bayou in Louisiana. Eve's aunt is the small towns physic and she has the ability to see and know all with only one problem, she is blind to her own life. Eve inherits her aunt’s strange ability of knowing things and being able to see in the future and she keeps this to herself never revealing her secret until it may be too late to change things. This gift comes with a curse of its own, Death. Everyone in the small town mocks the aunt and her abilities including the family, thinking she is crazy and knows nothing but not Eve. Eve knows of her aunt's abilities although no one knows Eve is able to do the same thing. Based on a vision the aunt sees a family lock down is ordered by Eve’s mother forcing the children to be stuck in the house. This slowly drives each member in the family crazy in their own way. Eve sees her family falling apart with her aunt sinking into depression, her father’s infidelity, and her mother’s wounded heart, her sister’s sanity, and the strength of her family all together. But she may be a little too late to do anything to help. A deep dark family secret is revealed and Eve finds herself enraged and wanting only one thing, revenge. The saying be careful what you wish for comes to life in this story. Murder, dishonesty, betrayal, hate, and anger are evolving within the house and the family. Loyalty is tested and Eve must make a tough and life changing decision. With Eve’s ability of knowing and seeing, she will be forced to choose between saving her family or to make things worse and rip them apart, permanently.

Seminal to the development of New Orleans R&B, Toussaint incorporated into the album elements of funk and soul music, while, according to AllMusic, suggesting neo-psychedelia. Two singles were released in support of the album, "Country John" backed with "When the Party's Over" and "Southern Nights"—Toussaint's signature song—backed with "Out of the City". Although neither single charted for Toussaint, "Southern Nights" as later covered by Glen Campbell in 1977 reached number one in Billboard's country, pop and adult contemporary charts. Released in May 1975 by Reprise Records, the album has been subsequently reissued multiple times on both LP and CD.
