Ambitious Vegan Mini-Chain Unveils its First Chicago Outpost on the Way to World Domination

The suburban restaurateur behind Winnetka’s first all-vegan restaurant, this month expanded her footprint into Chicago proper with the opening of a new location of her casual mini-chain in Lincoln Park. Elephant + Vine, a counter-service spinoff of owner CD Young’s two-year-old upscale spot Spirit Elephant, is positioned to tap into a proliferation of vegan and vegetarian fast food-style spots in the neighborhood with topping-heavy burgers, dairy-free milkshakes, and Buffalo cauliflower wings inside the Lincoln Common development at 2315 N. Lincoln Avenue.

Ramen Wasabi

Logan Square's Ramen Wasabi spends 45 hours making their tonkotsu broth, which is particularly impressive considering we can’t even watch a two-hour-long movie on Netflix without breaking it up into four parts. This long cooking process results in an incredibly silky pork bone broth, that when accompanied by thick noodles, fatty pork belly, and an oozing soft boiled egg, is one of the best tonkotsu ramens in the city.

Wicker Park's Kizuki Ramen is part of a Japanese chain. Tonkotsu broth is their specialty, and they roast their pork bones before boiling them, giving the soup an extra layer of depth and smokiness. Their menu also includes yuzu shio ramen with a pork and chicken broth mix, and tsukemen—where noodles are served separately from the soup and are dunked into it before each bite.
