Dunsmoor, a history-minded, hearth-fired restaurant, opens in Glassell Park this week

Pulling from regional and early American historical documents and cookbooks for inspiration, Dunsmoor focuses on live-fire cooking, preserved foods and other centuries-old cooking techniques. Here, chef Dunsmoor feeds the restaurant's hearth oven. (Brigitte Neman/Dunsmoor) Brian Dunsmoor spent years exploring early American cooking as the opening chef of Hatchet Hall, consulting regional and historical accounts and cookbooks to steer his menus as well as his techniques.

Perched Atop a Fitness Club, This New Hollywood Restaurant Rethinks Healthy Eating

Brazilian moqueca baiana with striped bass and jiquitaia pepper. Chef Fernando Darin’s body is in a state of ketosis. By consuming a strict diet of mostly fat and few carbohydrates, the chef is prompting his body to access fat stores instead of blood sugar for its energy. As the executive chef at Mother Tongue, the new restaurant perched atop the 75,000-square-foot, five-level fitness club called Heimat in Hollywood, Darin’s first-hand experience with the ketogenic diet, previous experimentations with veganism and vegetarianism, and career-long curiosity to understand how food can impact health will come in handy.
