A new food truck is now serving tacos and aguas frescas at the McKinney Farmers Market

Fresh Mex also takes its traditional Mexican fare on the road throughout North Texas — it's a food truck, after all.

Since debuting a little more than a month ago, McKinney’s newest food truck has gained traction throughout the city by serving traditional Mexican dishes made using family recipes.

Fresh Mex, which parks at the McKinney Farmers Market every Saturday from 8 a.m. to noon and appears at various locations in North Texas during the week, offers a variety of tacos, including flame-grilled carne asada, grilled chicken and portobello mushroom pastor tacos — all topped with a signature house-made green sauce, chopped onions and cilantro.

The menu also boasts a shrimp ceviche tostada, with shrimp and crab meat soaked in lime juice, and a ripened avocado stuffed with carne asada, chicken asada, portobello mushroom pastor or fresh shrimp ceviche. Vegan and keto-friendly options are available.

The business prepares aguas frescas as well as hibiscus tea made with fresh strawberries and pure cane sugar and fresh cucumber-lime juice.

In a news release, co-founders Mark and Jessica Thibodeaux said they were excited to serve authentic Mexican food to North Texas residents -- especially McKinney residents.

“We are McKinney locals and couldn’t imagine having our grand opening anywhere else than the McKinney Farmers Market,” Jessica said.

The food truck can be found at the farmers market at 315 South Chestnut St. from 8 a.m. to noon on Saturdays. Fresh Mex updates its Facebook page with its scheduled appearances throughout the city each week. The food truck and its full menu are also available to cater events.
