Serving bagels with house-made cream cheese, breakfast sandwiches and even avocado toast, Ruby’s opened Oct. 19 at 280 West Coleman Blvd. in Mount Pleasant.
Growing up in Connecticut, Roach always thought the New York area was the only place to find a good bagel. He has changed his tune since he started making his own in Charleston. Roach eventually launched a small business that helped him share the fruits of his labor with his Mount Pleasant neighborhood.
“I realized kind of quickly that the bagel business isn’t something you do just a couple hundred bagels,” Roach said.
With 20 to 24 bagel varieties, Ruby’s is rolling through much more than that since opening, especially on Sundays, when the line stretches toward the door into the early afternoon.
From pumpernickel and everything to French toast, Bloody Mary and cinnamon crunch, there is an assortment of sweet and savory bagels at Ruby’s, open daily from 7 a.m.-3 p.m.
