Meet Tim Mulligan

Tim’s got a day job in HR, but he began his career in the hospitality industry working for The Westin. Fast forward decades and after countless trips to the Coachella Valley, he moved to Palm Springs during the pandemic.

During those early days on lockdown, Mulligan decided to put his considerable energy into a couple of writing projects. He penned a critically acclaimed play called Witchland, which ran in San Diego, and put together the user-friendly cookbook A Perfect 10: Ten Proven, Scrumptious Recipes for Each Part of Every Meal.

These days, he spends time exploring the eclectic culinary landscape around the city. Here are some of his favorite discoveries:

Peninsula Pastries is one of the best bakeries: “ The Butterscotch Pecan Twist is really out of this world.”

Best Mexican food: “I love to sit at the patio at El Jefe at the Saguaro and drink the great margaritas. I love their nachos and also their vegan potato flautas. Also, you can't go wrong at Tac/Quila, especially with their amazing posole.”

Best Insta-Worthy Photo Ops spots to get a cocktail: “Pink Cabana in Indian Wells, Boozehounds and also Sugar High at Alcazar.”

Live Entertainment: “I love it in spring/summer when the King's Highway at the Ace Hotel does its live music Wednesday nights on the patio. I also love the Judy Show at The Purple Room and Bitchiest Brunch at Oscar's is a winner. I always take out of town guests there.”

Best Coffee Spot: “Koffi is my favorite because I can also grab a white chocolate muffin, so good.”


Favorite Restaurants: “I have a few faves, but my go-to is definitely Del Rey at the Villa Royale. Dark, sexy, an amazing cocktail program (grab the Gin & Tonica menu) - and the tapas are dynamite (best Brussel sprouts in town). I also love Bar Cecil and recommend sitting at the bar to take in the beautiful decor, well-versed bartenders, awesome drink program. All the food is great. And when I want a good drink and comfort food, definitely I head to Paul Bar, if I'm prepared to wait for a table. It's like nothing else in Palm Springs. It's more like you've stepped into a Times Square Theatre District dinner house.”

Best Breezy Palm Springs Dinner Experience: “There are many here, but I'd recommend Gigi's, Boozehounds (get the Korean Rice cakes!), Chi Chi at the Avalon, and sitting under the trees at Birba.”

Best Food, Overall: “I love the Vietnamese food at both the Rooster and the Pig, and also at 533 Viet Fusion.”

Fun Night Out: “I like to head to the Caliente Tropics Hotel — love its Tiki bar, The Reef’s cocktail lounge. Also, Le Fern and its casual Mexican restaurant, Sancho's. You can't go wrong there.”

Best Salads/Healthy/Vegan food:Chef Tanya's Kitchen is amazing. The OhMyGatoTaco Salad is the bomb.”

Best Quick Service: Head to the window at Gabino's Creperie. You can't go wrong with any of them. I always gravitate towards the turkey cheddar and then after, get an ice cream next door at Kreem.”
