Inspector's Notes: Observed the sushi rice that is held under a 4 hour TPHC plan was not labeled with the current date and time. Inspector's Note: Observed no thermometer to be present in sushi cooler and stand up reach in cooler.

Inspector's Note: Observed two employee drinks, one without a lid or straw, on food preparation surfaces. Observed dirty dishes stacked on top of clean dishes. Notified PIC. PIC placed all dishes to be washed and dried appropriately. Observed chemical sanitizer (quaternary ammonia) below the required concentration of 200ppm. Observed multiple food storage containers stacked on top of each other with moisture inside. 

KING CAJUN SEAFOOD (HAHOT INC.), 7312 HODGSON MEMORIAL DRIVE, SAVANNAH, 88

Inspector Notes: Dish machine not pulling sanitizer. Facility called Eco Lab for repairs. Facility to utilize dish washing in three compartment sink until repairs are made. Facility to advise when machine is repaired in order to verify machine working correctly. Main prep cooler for kitchen not holding temperature (all items 45 to 50 degrees F, see temperature log for specifics. Food items prepped and placed in cooler at approximately 12:00 pm. PIC to use time as a public health control and discard remaining product at 4:00pm. Items were placed on ice. Tartar sauce and shrimp sauces were discarded.

Inspector Notes: Observed containers of chicken and beef to be stored in reach in cooler uncovered a nd not in active use. Observed reach in cooler to not have any internal thermometers within the unit. Observed dishes within the main kitchen to be stacked while still wet. Observed racks within reach in cooler and storage area to be soiled with debris. Observed shelf under prep top table to have accumulation of old food debris (onion peels). Observed grease accumulation on the walls under the hood behind the stovetop and grill. 

VENSON CAFE, 3 E LATHROP AVE., SAVANNAH, 88

Inspector Notes: Observed multiple TCS food items in the reach-in cooler cold-holding above 41 F. (COS- PIC disposed food items in the trash.) Observed multiple TCS food items hot-holding below 135 F. Advised PIC to ensure all TCS food items are hot-holding at 135 F or above at all times. Observed hand sink drain disconnected; water from sink flows to the floor. Advised PIC to have hand sink drain fixed as soon as possible.
