For the last day of filming I made some of my mum’s delicious rum punch – it’s a family favourite and I love it… and so did the crew! Leave out the rum for a non-alcoholic punch, but remember – more rum, more dancing!

Serves 14-16

  • 175g (6oz) granulated sugar
  • 175ml (6fl oz) boiling water
  • Juice of 4 limes and 4 lemons
  • 1tsp Angostura bitters
  • 400ml (14fl oz) mango purée
  • 150ml (¼pt) strawberry purée
  • 300ml (½pt) white rum
  • 1ltr (1¾pt) tropical fruit juice
  • 1ltr (1¾pt) lemonade
  • Plenty of ice cubes
  • Lime and orange slices
  • Freshly grated nutmeg

Mix the sugar and water in a saucepan over a medium heat until dissolved. Set aside until cold.

In a large pitcher, mix the sugar syrup with the lime and lemon juice, bitters, purées and rum. Chill.

When ready to serve, stir in the tropical fruit juice and lemonade. Serve over ice, with lime and orange slices and a sprinkling of freshly grated nutmeg.
