Want to try your BBQ in a whole new way? Head to Sparks BBQ in Traverse City and check out their famous BBQ sundae, a layered savory concoction that is unlike any ice cream parfait you've ever had.
Sparks originally opened as a food truck in 2015. After just one week, owner and pit master Dean Sparks created the BBQ sundae. It proved so popular that the truck sold almost 6,000 of them that first summer.
It is still one of the most popular items on the menu.
The sundae consists of layers of coleslaw, baked beans, your choice of protein, house made BBQ sauce and a finishing touch of homemade beef jerky. You can pick from pulled pork, smoked brisket or pulled chicken.
Dig in to this cup of crazy and experience a creamy coleslaw, dressed very lightly in mayo, for a crunchy fresh note. The "Grandma's Baked Beans" are made using a recipe that four generations have been enjoying. They are sweet and classic, and vegetarian.
We tried the sundae during our search for Michigan's Best BBQ, and had our version with pulled pork. Sparks pork gets smoked low and slow, and receives a nice dusting of spices sourced from locally owned Alden Mill House.
The cherry on top of all this is the beef jerky, which is chewy and salty, and kind of like a savory candy.
Together, this sundae is a unique way to eat BBQ.
Sparks moved to their current location in the summer of 2018. "It's the miracle block here in Traverse City for foot traffic," Sparks explained. They've expanded the menu, and not only offer all the BBQ classics, they also have a selection of salads and sandwiches, including several vegetarian options.
There is also a lively bar at Sparks, with many offerings that pair great with their BBQ.
Sparks welcomes you to stop by the next time you are in Traverse City. "Try us out, because it's all good," he said.
